With my husband off camping, I have been doing double duty around the house. By dinner time, I am just beat! My cabinets are bare so I had to get creative. Tonight's dinner comes from pure desperation. Surprisingly, these turned out pretty good and I will probably recreate them for lunch one day.
Ingredients:
1 can Chunk White Meat Chicken in Water (rinsed and drained)
1 1/2 Tbsp Zesty Italian Dressing
1/3 Green Pepper chopped
1/3 Onion chopped
1 carrot grated fine
2 pieces of Lettuce
4 Slices of Cornbread (from prior post)
1. In frying pan place chicken, dressing, green pepper, onion, and carrot. Cook over medium heat for about 15 minutes. Stir occasionally.
2. Toast bread during final minutes of cooking.
3. Top bread with mixture and lettuce. Add cheese if desired.
