Scalloped Turkey and Vegetable

1 Large Sweet Potato $0.73
1 Large Yellow Squash $0.93
1 Large Zucchini $0.76
1 Onion $0.35
1/2-1 lb Turkey (Cooked) $0.79
4-6oz. Cheddar Cheese (Shredded) $0.83
2 Cups Milk $0.50
3 TBSP Flour
3 TBSP Butter (melted)
Paprika to taste
Pepper to taste

  • Preheat oven to 350
  • Thinly slice vegetables.
  • Layer 1/2 of vegetables in a large casserole dish.
  • Spread 1/2 Cheese and ALL of Turkey, shredded, in middle.
  • Layer remaining vegetables.
  • Top with remaining cheese.
  • In small bowl stir together milk, butter, and flour and pour over vegetables.
  • Season to taste
  • Place covered in oven and allow to cook for 1 hour.
Total cost of dinner less than $5.00. Will Serve 6.

$5 Dinner Challenge


Wine and Herb Vegetable Soup




1 Box College Inn Wine and Herb Broth ($2.39)

1 Cup Water (free)

2 Large Potatoes Chopped ($0.50)

3 Large Carrots Sliced ($0.30)

1 Green Pepper Chopped ($1.00)

2 Yellow Squash Sliced ($1.12)

1 Zucchini Sliced ($0.84)

1 Large Onion Chopped ($0.15)


I placed everything in the crock pot except the zucchini and squash and left on high for about 6 hours. Then I sliced up the remaining vegetables and threw them in the pot and allowed to cook for about 45-1 hour until they started to become soft.


I absolutely LOVE this broth and am hoping to find a cheaper homemade recipe , but to me it is entirely worth it.


The prices today as guesstimates because I can't seem to find my receipt anywhere. This makes a large pot that will fill 6-7 large soup bowls. I normally would serve with bread.
