$5 Dinner Challenge

Wine and Herb Vegetable Soup

1 Box College Inn Wine and Herb Broth ($2.39)

1 Cup Water (free)

2 Large Potatoes Chopped ($0.50)

3 Large Carrots Sliced ($0.30)

1 Green Pepper Chopped ($1.00)

2 Yellow Squash Sliced ($1.12)

1 Zucchini Sliced ($0.84)

1 Large Onion Chopped ($0.15)

I placed everything in the crock pot except the zucchini and squash and left on high for about 6 hours. Then I sliced up the remaining vegetables and threw them in the pot and allowed to cook for about 45-1 hour until they started to become soft.

I absolutely LOVE this broth and am hoping to find a cheaper homemade recipe , but to me it is entirely worth it.

The prices today as guesstimates because I can't seem to find my receipt anywhere. This makes a large pot that will fill 6-7 large soup bowls. I normally would serve with bread.

Peanut Butter Chocolate Chip Bread

Ingredients:

3/4 Cup Water
1/3 Cup Peanut Butter
1 tsp Salt
3 Tbsp. Brown Sugar
2 Tbsp Vanilla Pudding Mix (the powder not prepared)
2 Cups Bread Flour
1 1/2 tsp Yeast
3/4 Cup Chocolate Chips (Chilled)

1. Add all ingredients, except chocolate chips, to bread machine as per manufactures instructions.

2. Set on Basic White Light Crust. Add 1-2 additional Tbsp water/flour if needed after 5-10 minutes of kneading.

3. When timer beeps to add nuts, berries, etc. Add Chocolate Chips. If your machine does not have this feature add Chocolate Chips once dough is nicely kneaded together.

This bread was heavenly! The chocolate chips over powered the peanut butter flavor a little and I will probably decrease the amount to 1/2 cup next try, but this is a definite winner in our home. I envision this hot out of the oven topped it with a scoop of vanilla ice cream. Too bad we didn't have any and I was too impatient to run out and buy some.

Easy Chicken Sandwich

With my husband off camping, I have been doing double duty around the house. By dinner time, I am just beat! My cabinets are bare so I had to get creative. Tonight's dinner comes from pure desperation. Surprisingly, these turned out pretty good and I will probably recreate them for lunch one day.

Ingredients:
1 can Chunk White Meat Chicken in Water (rinsed and drained)
1 1/2 Tbsp Zesty Italian Dressing
1/3 Green Pepper chopped
1/3 Onion chopped
1 carrot grated fine
2 pieces of Lettuce
4 Slices of Cornbread (from prior post)

1. In frying pan place chicken, dressing, green pepper, onion, and carrot. Cook over medium heat for about 15 minutes. Stir occasionally.

2. Toast bread during final minutes of cooking.

3. Top bread with mixture and lettuce. Add cheese if desired.

$5 Dinner Challenge

Spicy Fiesta Pasta

Ingredients:
16 oz. jar Salsa (2.39)
2 ½ Cups water (free)
½ Tbsp Cumin (???pennies)
1 box Kraft Deluxe Macaroni and Cheese Dinner (bought during a B1G1 sale with coupon $.50)
1 Can Corn drained ($.50)
1 ½- 2 Cups Black Beans cooked (from large batch of dry beans I cooked earlier $.50)
½ Cup Sour Cream ($.25)

Directions:
1. In Large pot combine salsa, water, cumin, and noodles. Bring to a boil. Then lower heat and simmer for 10 minutes.
2. Add corn, beans, and cheese and heat for about 5 minutes longer.
3. Remove from heat and add sour cream. Allow to cool and thicken slightly before serving.

Makes about 6+ large bowls.
This is my first attempt at the $5 dinner challenge. It isn't as healthy as many of the other meals, but it is what works for my family. I'm sure you could easily substitute homemade salsa and whole wheat noodles with cheese sauce and have great results, but honestly today I just needed something quick and easy. This actually turned out really yummy with lots of flavor.
